  • 1 - cup apple cider
  • 1/2 - cup sour cream
  • 2 - tsp vanilla extract
  • 1/2 - cup unsalted butter, melted
  • 2 - large eggs, at room temperature
  • 3/4 - cup brown sugar, lightly packed
  • 1 1/4 - cups all-purpose flour
  • 2 - Tbsp cornstarch
  • 1 1/4 - tsp baking powder
  • 1/2 - tsp baking soda
  • 1/2 - tsp salt
  • 1/2 - tsp ground cinnamon
  • 1/4 - tsp freshly grated nutmeg or more to taste
  • 1/4 - cup rolled oats adds a nice texture!
  • 3 - Tbsp unsalted butter, for topping
  • 1/4 - cup granulated sugar
  • 1/2 - tsp ground cinnamon

Step 1: Preheat the Oven
  1. Begin by preheating your oven to 325°F (163°C). Next, prepare your 9×5 loaf pan by lightly greasing it and then lining it with parchment paper. This little trick will make it so much easier to lift out the loaf once it’s baked, ensuring every last bite is retrieved!
Step 2: Reduce the Apple Cider
  1. In a small saucepan, pour in your apple cider and bring it to a gentle boil over medium heat. Once boiling, let it simmer for about 10 minutes or until the cider has reduced to about half a cup. Set it aside to cool slightly—this helps to concentrate the flavor beautifully.
Step 3: Mix the Wet Ingredients
  1. Once your cider is cooling, grab a mixing bowl and combine the sour cream and vanilla extract. Once the cider has cooled a bit, add it to this mixture, stirring until combined. Meanwhile, in the same saucepan, gently melt the butter. Let it cool slightly, then move on to the next step.
Step 4: Whip Up the Eggs and Sugar
