Ingredients

  • Here’s what you’ll need for this savory banana bread:
Batter:
  • - 1 cup unsalted butter, melted 2 sticks
  • - 1 cup granulated sugar
  • - 3 large eggs for added moisture and richness
  • - 1 teaspoon vanilla extract
  • - 2 cups all-purpose flour
  • - 1 teaspoon baking soda
  • - 1 and 1/2 cups mashed ripe bananas about 4 bananas
  • - 1/2 teaspoon salt to enhance the flavors
Cinnamon Sugar Swirl:
  • - 3 tablespoons unsalted butter, melted
  • - 3 tablespoons granulated sugar
  • - 3 tablespoons dark brown sugar
  • - 2 tablespoons ground cinnamon
  • - 6 thin slices of ripe banana, for garnish

Method

Step 1: Preheat the Oven and Prepare the Pan
  1. Preheat your oven to a cozy 350°F (175°C). While it warms up, lightly grease and flour a 9×5-inch loaf pan. This ensures your bread will release easily after baking, so make sure to cover all areas well. If you prefer, you could also use parchment paper for easier removal.
Step 2: Mix the Batter
  1. In a large mixing bowl, melt the butter and allow it to cool slightly. Next, whisk in the granulated sugar, and then add the eggs and vanilla extract. Stir until everything is well combined. This mixture should be nice and creamy. Remember, the softened butter gives the banana bread a rich texture and delectable flavor.
Step 3: Combine the Dry Ingredients
  1. In a separate bowl, mix the all-purpose flour, baking soda, and salt. Take care to blend these dry ingredients together well to ensure that the baking soda distributes evenly throughout the flour. Then slowly add this mixture into your wet ingredients, stirring gently until just combined. Overmixing can lead to dense banana bread, so fold in the mashed bananas until they’re well incorporated.
Step 4: Prepare the Cinnamon Sugar Swirl
  1. In a smaller bowl, combine the melted butter, granulated sugar, dark brown sugar, and ground cinnamon. Use a fork to mix these ingredients until you have a thick, well-combined mixture. If your swirl looks too thick to drizzle, just add a touch more melted butter until it reaches the right consistency. You’ll want it thick enough to create beautiful swirls without just disappearing into the dough.
Step 5: Layer the Batter and Swirl
  1. Spread about 1/4 of your banana bread batter (around 1 cup) evenly in the bottom of your prepared loaf pan. Next, dollop about 1 tablespoon of the cinnamon sugar mixture over the batter and use the back of a spoon or a table knife to create a thick swirl. Repeat this process—layering 1/3 of the remaining batter followed by 1/3 of the cinnamon mixture—creating beautiful spirals of flavor as you go.
Step 6: Finish Off the Layers
  1. Continue layering with 1/2 of the remaining batter on top with half of the remaining cinnamon mixture. Finally, spread the last of the batter on top and dollop with any remaining cinnamon sugar. Use a knife to make some grand swirls through the entire loaf. Place six slices of banana down the middle for that extra touch of flair.
Step 7: Bake to Perfection
  1. Place your loaf pan on a baking sheet in the middle rack of your oven, and let it bake for about 60-70 minutes or until it turns a golden brown. To check for doneness, insert a toothpick in the center; it should come out clean. If the top browns faster than the center bakes, don’t hesitate to cover it with foil to continue baking without burning the crust.
Step 8: Cool and Enjoy
  1. Once baked, allow your delicious banana bread to cool in the pan for about 30 minutes before transferring it to a wire rack to cool completely. The aroma during this cooling period will be almost unbearable— but waiting is worth it!

Notes

- Use very ripe bananas: They should be spotty and feel soft. The riper, the better—and they’ll add natural sweetness.
- Don’t overmix the batter: Mix just until combined for light and fluffy bread.
- Adjust the sweetness if desired: Feel free to reduce the sugar if you prefer a less sweet loaf.
- Add nuts or chocolate chips: Feel free to toss in walnuts, pecans, or chocolate chips for added texture.
- Use fresh ingredients: Ensure your baking soda is fresh for the best rise.
