  • - 1/2 cup of Dutch-process cocoa powder
  • - 1 teaspoon of baking soda
  • - 1/2 teaspoon of sea salt
  • - 3 large ripe brown bananas about 1 ½ cups when mashed
  • - 1/4 cup of unsalted butter, melted and slightly cooled
  • - 1/4 cup of canola oil or melted coconut oil
  • - 3/4 cup of packed light brown sugar
  • - 1 large room-temperature egg
  • - 1 teaspoon of pure vanilla extract
  • - 1 cup of semisweet chocolate chips, divided
  • - 1/2 teaspoon of instant coffee granules for richer flavor
  • - 1/2 teaspoon of cinnamon to add warmth

Method
 

Step 1: Preheat Your Oven
  1. Begin by heating your oven to 350°F (175°C). This ensures a steady bake and helps your bread rise perfectly. While it’s warming up, take out your trusty 9-by-5-inch loaf pan and give it a good coating of nonstick cooking spray to keep the bread from sticking.
Step 2: Mix Dry Ingredients
  1. In a medium bowl, combine the flour, Dutch-process cocoa powder, baking soda, sea salt, and the cinnamon (if you’re using it). Whisk these together until evenly blended. This step is essential as it helps distribute the baking soda and cocoa throughout the batter.
Step 3: Prepare the Bananas
  1. Now, let’s tackle those bananas. In a large mixing bowl, take your overripe bananas and mash them thoroughly using a fork. You're aiming for a smooth consistency that resembles a thick puree; those lumps will bake out later.
Step 4: Add Fats and Sugars
  1. Next, pour in the melted butter and your choice of oil to the mashed bananas. Stir them together until completely combined. Then, add in the brown sugar, egg, and pure vanilla extract. Mix it all until you have a smooth and glossy mixture.
Step 5: Combine Wet and Dry Mixtures
  1. Gradually add the dry ingredients to the banana mixture. Be careful not to mix vigorously—your goal is just to incorporate the ingredients until they are barely mixed. Overmixing can lead to dense bread, and we definitely don't want that!
