Ingredients

  • To whip up these delicious muffins, here's what you'll need:
Muffins:
  • - ⅓ cup unsalted butter, melted and slightly cooled
  • - ½ cup light brown sugar, packed and soft
  • - 2 large eggs
  • - 2 cups mashed very ripe bananas about 3-4 bananas
  • - 2 teaspoons pure vanilla extract
  • - 1 ½ cups all-purpose flour, fluffed and leveled
  • - 1 teaspoon baking soda
  • - ¼ teaspoon salt
  • - ½ teaspoon ground nutmeg optional, but adds extra warmth
  • - ½ cup chopped walnuts, pecans, or a mixture of nuts
Topping:
  • - 2 tablespoons sugar
  • - ¼ cup finely chopped walnuts or pecans

Method

Step 1: Preheat the Oven
  1. Start by preheating your oven to 350°F (175°C). This ensures the muffins bake evenly and come out perfectly when the time is right.
Step 2: Mix the Wet Ingredients
  1. In a large mixing bowl, whisk together the melted butter and packed brown sugar until fully combined. Give it about a minute, and then add the eggs. Next, dump in your mashed bananas and the vanilla extract. Whisk until the mixture is smooth and well blended—no one wants chunks of banana when they bite into that soft muffin.
Step 3: Combine the Dry Ingredients
  1. In another bowl, whisk together the all-purpose flour, baking soda, salt, and nutmeg (if you’re using it). This step is important because it evenly distributes the baking soda and salt throughout the flour.
Step 4: Mix Wet and Dry Ingredients
  1. Carefully add the dry ingredients to the wet mixture. Using a rubber spatula, gently fold everything together until it’s almost combined. You want to see some streaks of flour, but be cautious—overmixing can make your muffins tough and chewy, which is far from the goal!
Step 5: Stir In the Nuts
  1. Now for the fun part! Fold in the chopped nuts, ensuring they’re evenly distributed throughout the batter. This adds the perfect crunch to your bursting-with-flavor muffins.
Step 6: Prepare the Muffin Tin
  1. Grease your muffin tin or line it with cupcake liners. I usually prefer the liners because they make cleanup easier and add a nice pop of color!
Step 7: Fill the Muffin Cups
  1. Carefully divide the batter into the prepared muffin cups, filling each one about two-thirds full. That’s the sweet spot—if you overfill them, you’ll have a messy oven, and who wants that?
Step 8: Add the Topping
  1. Sprinkle a little sugar and your leftover chopped nuts over the top of each muffin. This step is optional, but it imparts a lovely crunch and a bit of sweetness on top.
Step 9: Bake and Cool
  1. Pop the muffin tin into your preheated oven and bake for 14 to 17 minutes. A toothpick inserted into the center should come out clean or with just a few crumbs. Once baked, let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

- Use Very Ripe Bananas: The riper the bananas, the sweeter and more flavorful your muffins will be.
- Don’t Overmix: Gently fold in the dry ingredients until just combined for soft, fluffy muffins.
- Experiment with Nuts: Feel free to mix and match different kinds of nuts—you can even add chocolate chips for a decadent touch!
- Storage Savvy: If you have leftovers, storing them in an airtight container keeps them fresh for days.
- Add-ins Galore: Consider mixing in dried fruit, chocolate chips, or spices like ginger for an extra kick.
