Step 1: Gather Your Ingredients

Step 2: Prepare the Carrot Mixture
- In a medium-sized bowl, combine the finely grated carrots and brown sugar. Let this mixture sit for an hour. This step might appear simple, but it allows the sugar to pull moisture from the carrots, enhancing the cake’s texture. After an hour, stir in the raisins (or cranberries) to give your cake a bit of chew and unexpected fruity pops.
Step 3: Preheat the Oven and Prepare the Pans

Step 4: Mix the Wet Ingredients
- In a large bowl, beat the eggs until they’re light in color and fluffy. Then, gradually add in the granulated sugar, vegetable oil, and vanilla extract, blending until well combined. Stir in the drained crushed pineapple next; this will add moisture and a hint of tropical flavor.

- Now, pour the batter evenly into your prepared cake pans – you want them level for even baking. Place them in the preheated oven and bake for about 45 to 50 minutes. Keep an eye out; the cakes are done when a toothpick inserted into the center comes out clean.
Step 8: Cool It Down
- Once baked, allow the cakes to cool in the pans for about 10 minutes. This helps them set a bit. After that, remove them from the pans and let them cool completely on a wire rack.
