Step 1: Toast Your Pecans
- First things first, preheat your oven to 350°F (175°C). If you choose to toast your pecans—highly recommended; it brings out their natural flavors!—line a baking sheet with parchment paper. Spread the pecan halves evenly across the sheet and pop them in the oven for about 3-5 minutes. Keep an eye on them; you want them golden, not burnt. Once done, take them out and set aside to cool slightly.
Step 2: Mix the Sugars and Butter
- In a large mixing bowl, combine the melted, cooled butter with the dark brown sugar and granulated sugar. Use a whisk to mix them until the sugars are completely blended with the butter. It should look smooth and glossy.
Step 3: Add Egg and Vanilla
- Now, toss in one large egg and the additional egg yolk. Add the vanilla extract as well and stir everything until it’s beautifully combined. This mixture should have a rich, creamy consistency.
Step 4: Whisk Dry Ingredients
- In a separate medium-sized bowl, whisk together the all-purpose flour, cornstarch, baking soda, baking powder, salt, and that touch of cinnamon. Mix to ensure everything is evenly incorporated.
Step 5: Combine Wet and Dry Mixtures
- Gradually add the dry mixture to the wet one. Stir gently, combining until the dough is just mixed. Don’t overwork it; you want those cookies to be soft and chewy.
Step 6: Fold in Pecans and Toffee
- Take your cooled pecans and chop them coarsely, then fold them into the dough along with the optional toffee bits and chocolate chips. You can really tailor these cookies to your tastes!
Step 7: Form and Bake
- Line two cookie sheets with parchment paper. Using a tall tablespoon or cookie scoop, drop heaping spoonfuls of the dough onto the sheets, leaving at least 2 inches between them. You’ll want to make sure they have plenty of space to spread!
Step 8: Bake the Cookies
- Bake in your preheated oven for about 10-12 minutes. The edges should begin to set while the centers remain slightly soft. As they cool, they will gain that soft and chewy texture. If you're feeling fancy, sprinkle a little flaky sea salt on top right after they come out of the oven.
Step 9: Cool and Enjoy
- Let these beauties cool on the tray for about 5 minutes, then transfer them to a wire rack to finish cooling completely. The waiting is hard, but trust me; they’re worth it.
Notes
- Use Fresh Ingredients: Fresh butter and eggs make a big difference in texture and flavor.
- Don’t Skip the Resting Time: Allowing the dough to chill slightly in the fridge can enhance flavors and improve the texture.
- Experiment with Mix-ins: Try substituting different nuts for a unique twist or add coconut flakes for a tropical vibe.
- Adjust Spice Levels: If you love a spicier cookie, increase the cinnamon or even add a pinch of nutmeg.
- Visual Reference: Keep an eye on the cookies as they bake; that underdone center is critical to achieving that perfect chewy texture.
