  • 2 1/2 cups ripe diced tomatoes
  • 2 large fresh garlic cloves, finely minced
  • 1 1/2 tablespoons freshly chopped sweet basil leaves
  • 1 tablespoon chopped fresh oregano leaves
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup aged balsamic vinegar
  • 2 teaspoons natural cane sugar
  • 1 1/2 tablespoons rich extra-virgin olive oil, divided
  • 1/4 cup finely shredded Parmesan cheese
  • 1 pound fresh store-bought or homemade pizza dough
  • Fine cornmeal, for dusting

Method
 

Step 1: Prepare the Tomato Mixture
  1. In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, and oregano. Add the crushed red pepper flakes. Season with salt and pepper to taste.
    Gently mix to combine. Let it sit for about 15 minutes. This allows the flavors to meld beautifully.
Step 2: Make the Balsamic Syrup
  1. In a small saucepan over medium heat, combine the aged balsamic vinegar and natural cane sugar. Bring it to a gentle boil, then reduce the heat to let it simmer.
    Stir occasionally until it thickens, about 10-15 minutes. It should be syrupy but still pourable. Remove from heat and let it cool slightly.
Step 3: Preheat the Oven
  1. While that's simmering, preheat your oven to 475°F (245°C). If you’re using a pizza stone, place it in the oven to heat up as well. A hot surface gives that desired crunchy crust.
Step 4: Roll Out the Dough
  1. On a clean surface dusted with cornmeal, roll out your pizza dough to your desired thickness. I like it a bit thicker to hold up all the toppings.
Step 5: Assemble Your Pizza
  1. Place the rolled-out dough onto a baking sheet or pizza stone. Brush half of the olive oil onto the surface. Next, evenly distribute the tomato mixture over the dough. Sprinkle the shredded Parmesan cheese on top for added flavor.
Step 6: Bake the Pizza
  1. Transfer your pizza to the oven and bake for about 12-15 minutes, until the edges are golden and the cheese is bubbly. Keep an eye on it to prevent burning.
Step 7: Finish with Balsamic Syrup
  1. Once baked, remove the pizza from the oven and drizzle it with the balsamic syrup. Finish it off with a light drizzle of the remaining olive oil. Slice and serve while hot!

Notes

  • Tomatoes: If fresh tomatoes aren’t available, use canned diced tomatoes. Just drain them well before use.
  • Garlic: In a pinch, garlic powder can be used, but fresh garlic offers a flavor that can’t be replicated.
  • Basil: Dried basil is an option if fresh isn’t on hand. Use about one-third of the amount.
  • Pizza Dough: You can use store-bought flatbreads, naan, or even gluten-free pizza crusts if you prefer.
