Ingredients
  

  • 6 ounces of herbed chicken stuffing mix
  • 10 1/2 ounces of creamy celery soup canned
  • 10 1/2 ounces of savory chicken soup canned
  • 1 1/2 cups of low-sodium chicken stock
  • 1/4 cup of whole milk or cream for a richer texture
  • 2 pounds of tender chicken fillets
  • 1/2 teaspoon of coarse sea salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1 teaspoon of garlic powder for depth of flavor
  • 1/2 teaspoon of smoked paprika for a subtle smoky touch
  • Fresh or dried parsley for garnish

Method
 

Step 1: Prepare the Chicken
  1. Start by preheating your oven to 350°F (175°C). While it’s heating, you’ll want to prepare the chicken. 
    In a large skillet over medium heat, season your chicken fillets with salt, pepper, garlic powder, and smoked paprika. Sear them until they are lightly browned on both sides—about 4-5 minutes per side. 
    They don’t need to be fully cooked yet, as they’ll finish cooking in the oven. This step adds a layer of flavor that can make a big difference.
Step 2: Mix the Soups
  1. In a medium mixing bowl, combine the creamy celery soup, savory chicken soup, chicken stock, and whole milk or cream.
    Whisk them together until smooth. This mixture will create a creamy, flavorful base for your casserole. The blend of soups gives a wonderful depth that complements the chicken perfectly.
Step 3: Combine the Stuffing
  1. In a separate bowl, pour the herbed chicken stuffing mix. Once you’ve mixed the soups, carefully pour them over the stuffing mix. Stir gently until the stuffing is just coated. It should be moistened but not overly soggy. If you like a bit more texture, you can add a handful of diced vegetables like onions or bell peppers at this stage.
Step 4: Layer the Casserole
  1. In a greased 9x13-inch baking dish, place the seared chicken fillets in a single layer. Pour the stuffing mixture over the chicken, spreading it evenly. Try to cover the chicken entirely—this will keep it moist while baking.
Step 5: Bake
  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After that, remove the foil and bake for an additional 15-20 minutes. You want the chicken to reach an internal temperature of 165°F (74°C) and for the topping to be golden and slightly crispy.
Step 6: Garnish and Serve
