  • 1 head of cauliflower, stems removed and cut into florets
  • 1 head of broccoli, stems removed and cut into bite-sized florets
  • 3–4 cups shredded rotisserie chicken
  • 1 tablespoon extra virgin olive oil
  • 1/2 medium yellow onion, finely chopped
  • 2 large eggs, beaten
  • 2–3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon fine sea salt
  • 1 1/2 cups sharp white cheddar cheese, grated separated
  • 1 cup full-fat Greek yogurt
  • 1/4 cup whole milk
  • 2 heaping cups of baby arugula leaves
  • 1/4 teaspoon crushed red pepper flakes
  • 2/3 cup homemade or store-bought crispy parmesan crisps, crushed
  • A squeeze of lemon juice

Method
 

Step 1: Preheat the Oven
  1. First thing’s first, preheat your oven to 375°F (190°C). This ensures your casserole bakes evenly and becomes that beautiful golden color we all love.
Step 2: Prepare the Vegetables
  1. Next, wash and chop your cauliflower and broccoli. We want them in bite-sized pieces so they cook uniformly. Once prepared, set them aside. This is a good time to admire your colorful veggies. Isn’t fresh produce a joy?
