Ingredients
  

  • 1 packet of fajita seasoning
  • 2 cups quick-cooking rice
  • 1 can diced tomatoes with green chilies undrained
  • 1 can cream of mushroom soup
  • 1 1/2 cups low-sodium chicken stock
  • 1 cup frozen bell pepper and onion mix
  • 1 cup plain Greek yogurt
  • 1/2 cup corn kernels
  • 1 package of shredded fiesta blend cheese roughly 2 cups
  • 4 cups shredded rotisserie chicken approximately 2 large chicken breasts
  • 1 tsp cumin

Method
 

Step 1: Gather Your Ingredients
  1. Start by gathering all your ingredients. This way, you’ll have everything ready and avoid any last-minute searches.
Step 2: Preheat Your Oven
  1. Preheat your oven to 350°F (175°C). Good things happen when you give the oven a head start.
Step 3: Cook the Rice
  1. Cook the quick-cooking rice according to the package instructions. Set it aside once done.
Step 4: Mix the Casserole Base
  1. In a large mixing bowl, combine the cooked rice, undrained diced tomatoes, cream of mushroom soup, chicken stock, frozen bell pepper and onion mix, Greek yogurt, corn, cumin, and fajita seasoning.
Step 5: Add the Chicken
  1. Fold in your shredded rotisserie chicken gently until well incorporated.
Step 6: Transfer to Baking Dish
  1. Pour the mixture into a greased 9x13 inch baking dish. Ensure the mixture is evenly spread out.
Step 7: Cheese It Up
  1. Top the mixture with shredded fiesta blend cheese, ensuring that every inch is covered.
Step 8: Bake
