  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced or grated
  • 2 celery stalks, thinly sliced
  • 1 cup cremini mushrooms, quartered
  • 1 teaspoon dried thyme or fresh thyme leaves
  • 1 teaspoon dried rosemary, crushed for enhanced aroma
  • 1 teaspoon smoked paprika
  • ½ teaspoon lemon zest
  • ½ cup dry white wine
  • 1 pound baby potatoes, quartered if large
  • 2 cups low-sodium or homemade chicken broth
  • 1 cup heavy cream or half-and-half for a lighter option

Step 1: Prepare the Chicken
