When I think of comfort food, I often picture a steaming dish fresh out of the oven, filled with warm flavors and rich textures. One dish that immediately comes to mind is King Ranch Chicken Casserole.

Ingredients
  

  • 1 can diced tomatoes with green chili peppers 10 ounce)(such as RO*TEL®
  • 1 tablespoon canola oil
  • 1 can condensed mushroom soup 10 ½ ounce
  • 1 can condensed chicken soup 10 ½ ounce
  • 2 tablespoons crème fraîche
  • 1 cup chicken stock
  • 1 rotisserie chicken, shredded or cubed 3 pound
  • 1 medium white onion, finely chopped
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 package shredded sharp Cheddar cheese 8 ounce
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • 10 corn tortillas, cut into triangles 6 inch
  • 1 cup 1 fresh corn kernels, or 1 tablespoon lime juice

Method
 

Step 1: Preheat the Oven
  1. First things first—let’s preheat that oven of yours to 350°F (175°C). This step ensures that your casserole cooks evenly and comes out bubbly and golden brown at the end.
Step 2: Prepare the Vegetables
  1. Next, heat the canola oil in a large skillet over medium heat. Add the chopped onion, red, and green bell peppers. Sauté for about 5-7 minutes until the veggies become tender. Your kitchen will start smelling great, and that’s a good sign!
Step 3: Make the Creamy Mixture
  1. In a large bowl, combine the diced tomatoes (with their juices), condensed mushroom and chicken soups, crème fraîche, and chicken stock. Whisk it together until well blended. This creamy goodness is going to elevate the entire casserole.
Step 4: Add the Chicken and Spices
