Ingredients

  • 1 pinch of fine sea salt: Enhances overall flavor and balances the sweetness.
  • 2/3 cup creamy low-fat Greek yogurt: Provides protein and creamy texture.
  • 2 tablespoons unsweetened shredded coconut: Adds tropical flavor and texture without overwhelming sweetness.
  • 3 1/2 cups frozen wild blueberries: The star ingredient, these are packed with antioxidants.
  • 1 tablespoon freshly squeezed lemon juice: Adds brightness and complexity.
  • 2 1/2 tablespoons pure maple syrup: Sweetens naturally.
  • 1/2 teaspoon pure vanilla extract: Enriches the flavor profile.
Optional Toppings:
  • Finely chopped roasted pistachios
  • Fresh mint leaves, gently torn for freshness
  • A sprinkle of extra shredded unsweetened coconut

Method

Step 1: Prepare Your Ingredients
  1. Start by gathering your ingredients. Measure them out so everything is ready to go. This is key; once you start blending, you’ll want to work quickly.
Step 2: Blend the Ingredients
  1. In a high-speed blender or a food processor, combine all the ingredients. Begin with the Greek yogurt, add the frozen blueberries, shredded coconut, lemon juice, maple syrup, and vanilla extract.
Step 3: Blend Until Smooth
  1. Pulse everything together until completely blended. You should achieve a creamy consistency. If the mix seems too thick, add a splash of milk or water to loosen it.
Step 4: Taste Test
  1. Here is where you can play the chef! Tilt the blender slightly and scoop a bit out with a spoon. Does it need more sweetness? A splash more maple syrup can save the day!
Step 5: Freeze Your Yogurt
  1. Once you’re satisfied with the taste and texture, transfer the mixture into an airtight container. Smooth the top down with a spatula. This will help it freeze evenly.
Step 6: Freeze for At Least Four Hours
  1. Let it freeze for at least four hours but overnight works best. Who are we kidding; it’s best if you can resist the temptation!

Notes

Use wild blueberries: They are generally sweeter and more flavorful than standard blueberries.
Serve immediately: For the best texture, serve straight away after blending.
Let it sit: If it’s too hard after freezing, let it sit at room temperature for a few minutes to soften.
Experiment with flavors: Try adding a handful of spinach for a green twist, or swap the blueberries for mango.
Don’t skip the salt: A little pinch helps enhance flavors.
