Ingredients
  

  • 1 stick unsalted butter, melted 8 tablespoons
  • 1 cup whole milk
  • 1 (10.5-ounce) can condensed cream of chicken soup I use Campbell’s Hearty Healthy variety
  • 1 (10.5-ounce) can condensed cream of mushroom soup I use Campbell’s Heart Healthy variety
  • 4 cups cooked, shredded chicken
  • 1 (8-ounce) package (about 3 ¾ cups) dry stuffing mix I use Pepperidge Farm Herb Seasoned Stuffing Mix
  • 1/2 teaspoon dried thyme optional, for extra flavor in the stuffing
  • 1 tablespoon fresh parsley, chopped optional, for garnish

Step 1: Prepare Your Cooking Space
  1. Like any expedition, a well-prepared base camp is essential. Clear your countertops, gather your ingredients, and grab your cooking pots and utensils. You’ll need a large skillet for this dish. A non-stick or cast iron pan works beautifully.
Step 2: Melt the Butter
  1. In a medium saucepan over medium heat or in the microwave, melt the stick of butter until it’s completely liquid. Be careful not to let it brown; we want it to stay pale and fragrant.
Step 3: Mix the Soups
  1. In a large bowl, combine the melted butter, whole milk, cream of mushroom soup, and cream of chicken soup. Stir until everything is well combined and smooth. This mixture will be the creamy foundation of your casserole.
Step 4: Add the Chicken
  1. Next, toss in the shredded chicken. Make sure to use chicken that is cooked and cool to the touch. Fold the chicken into the soup mixture until it’s fully coated. The shredded texture adds to the comforting feel of the casserole.

  1. Time for the magic! Sprinkle the dry stuffing mix into the bowl with your chicken and soup mixture. If you’d like a herbier flavor, toss in the dried thyme here. Mix it all together until everything is evenly combined.
