Ingredients

  • 12 fresh, ripe strawberries, rinsed and fully dried
  • 1 tablespoon crushed freeze-dried raspberries
  • 2 teaspoons light canola oil or neutral sunflower oil
  • Decorative sprinkles or gourmet topping blends, as desired
  • 1 tablespoon finely chopped toasted pistachios
  • 1 cup premium white chocolate discs or creamy white baking morsels

Method

Step 1: Prepare the Strawberries
  1. Start with the most critical component: the strawberries. Rinse them thoroughly under cold water. If they’re wet, the chocolate won't adhere well.
  2. Using a paper towel, gently pat them dry. You want them completely moisture-free.
Step 2: Melt the Chocolate
  1. In a microwave-safe bowl, combine your white chocolate discs and oil. Microwave in 30-second intervals, stirring between each one until the chocolate is completely melted and smooth. Be cautious not to overheat; chocolate can seize if it gets too hot.
Step 3: Coat the Strawberries
  1. Hold a strawberry by the stem and dip it into the melted chocolate, allowing any excess to drip off. Swirl it slightly to get an even coat. Place the coated strawberry on a parchment-lined baking sheet.
Step 4: Add Toppings
  1. While the chocolate is still wet, sprinkle with the crushed freeze-dried raspberries, or any toppings of your choice. This prevents the toppings from falling off after the chocolate hardens.
Step 5: Let Them Set
  1. Once all your strawberries are coated, place the baking sheet in the fridge. Wait about 30 minutes for the chocolate to set.

Notes

Here are some quick tips to ensure your strawberries are a hit:
  • Use fresh strawberries for the best flavor. Check for ripeness!
  • Ensure strawberries are dry before dipping to help the chocolate adhere.
  • Experiment with different decorations; the options are endless.
  • You can also add a drizzle of melted chocolate to add visual flair once the initial coat sets.
Keep an eye on the melting chocolate. Stirring it frequently helps prevent burning.
